Moroccan tajine isn’t just a dish—it’s a cooking tradition that dates back centuries. Named after the iconic clay pot it’s cooked in, tajine brings together tender meat, vegetables, and spices in a slow-simmered stew that captures Morocco’s rich culinary soul.

🛒 Ingredients

  • 1 whole chicken, cut into pieces (or use thighs/legs)
  • 2 preserved lemons, quartered
  • 1 cup green or purple olives
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • 1/2 tsp black pepper
  • Pinch of saffron (optional)
  • 1/4 cup olive oil
  • Handful of chopped parsley and cilantro
